Why do blades have gullets at all?

The gaps between segments are not there to save material. They are doing three jobs, and every rim design is a trade-off between them.

Clearing debris. Material removed from the kerf has to go somewhere. In concrete and block that means a substantial volume of spoil, and without gullets it packs into the cut and the blade stops working.

Cooling. Gullets let air move across the segment faces. On a dry-cut blade this is most of the cooling it gets, which is precisely why a continuous rim cannot be run dry.

Allowing expansion. A steel core heats and grows. Gullets give it somewhere to go rather than distorting the disc.

Against those benefits, every gullet is an interruption in the cutting edge. Each time a segment leaves the cut and the next enters, the material at the exit face is momentarily unsupported. That is the entire reason chipping happens, and the entire reason continuous rims exist.

How do you trade finish quality against cutting speed?

Rim choice is really a single question: does the cut face end up visible?

If it does not, take the fastest rim the material allows. A structural slab cut, a trench boundary, a demolition opening, a footing — nobody inspects the arris, so a segmented rim clearing debris efficiently is the right answer and anything else is slower for no gain.

If it does, work back from the finish. Porcelain and polished stone need a continuous rim run wet, and you accept a slower cut as the price. Pavers, face brick and exposed block sit in between, which is exactly the gap a turbo rim fills — serrated enough to clear debris and cut dry, unbroken enough to avoid top-face chipping.
